Baking with Van: Cookies with White Chocolate and Cranberries

Hey guys,

it's baking time again! This time I was in the mood for baking some nice and tasty cookies.
By the way, white chocolate is my absolutley favorite sort of chocolate.

So, as ingredients we need:
  • 200g white chocolate (I've mixed a bar of plain white chocolate with a bar of white chocolate with hazelnuts)
  • 60g cranberries
  • 60g oatmeal

  • 190g flour (of your choice)
  • 3g baking powder
  • 3g baking soda
  • a pinch of salt

  • 115g soft butter
  • 200g sugar (half white and half brown)
  • 1 large egg

Before the creation of the delicious cookies starts, we need to preheat the oven to 160°C and to lay some baking trays out with baking paper. For the given amount of ingredients I've needed three baking trays.

First, divide the chocolate into chunks and mix them in a seperate bowl with the cranberries and the oatmeal (1). In a second bowl, stir the butter, the sugar and the egg until you have a very creamy consistency (2). Mix the flour, the baking powder, the baking soda and the salt and add it bit by bit to the creamy mixture while you stir everything permanently. 

In a final step, add the chocolate mixture (3) and fold it into the dough (4).
Before you put the cookie dough on your baking tray, I recommend to cool the dough in the fridge for around 30 minutes. This helps to have nice and chewy cookies. The warmer the dough is before you put it into the oven, the more it will melt. Your cookies will be big and flat what makes them very crisp and dry. So pay attention to give the cookie dough some time in the fridge. :-)

After the cooling time put some dough-piles onto your baking tray. Take care that there is enough space between the single piles. I've put three piles in a row and three rows on the tray. 
Then, put the cookies into the oven for aroung 13-15 minutes.

And ta-dah! You have delicious cookies!

Let them cool down for some minutes before you get them off the tray and arrange them on a nice plate.
